Spice labelling

The fully-formed but still unripe berry fruits are used as seasoning. They are either immediately immersed in a salt or vinegar brine or also air-dried and increasingly freeze-dried in a particularly gentle process.

Taste

Green pepper has a mildly aromatic smell; it is moderately hot, with a warm and highly aromatic, through to fruity taste.
