The different above- and below-ground parts of the plant are used fresh and dried as seasoning and as a vegetable. The dried seeds make good seasoning.

Taste

All the parts of the plant are very aromatic. The smell is penetrating, and the taste is burning-sweet and spicy. The celery seeds are also slightly bitter.
